Scarlet Knife Restaurant Opens in Latham, NY

Our design team was on hand November 11 to celebrate the ribbon cutting for the Scarlet Knife restaurant in Latham, NY. The adaptive reuse project transformed 15,000 SF of an abandoned box store into an expansive, upscale restaurant that provides a unique dining experience and attracts people from all over the Capital Region.

The farm-to-table restaurant’s menu is focused on regionally and locally grown or sustainable resources, inspired by the seasons, farmers, fishermen, and by their talented team of chefs. The interior design reflects the restaurant’s menu, mission, and brand.

Scarlet Knife’s focal point is an open kitchen, designed to give diners a “tour” as their food is being prepared. There they can take a seat at the bar or head outside to a green patio and fireplace. The patio’s name, the “Garden Center,” highlights the building’s previous retail use.

The aesthetic blends clean lines, warm grays, whites, and burnt umbers with natural greenery, scarlet accents, and honey hues, creating an exclusive, upscale feel, while being comfortable and inviting. Large windows offer natural lighting and connects patrons to the garden patio. Tucked away from the dining space, the Dessert Room highlights intricate desserts and creates an exclusive, sweet experience.
